2017 – Resolution….
New Year is coming…. Again!
Excitement is always there in the cut of a new cycle. Reviewing what’s past, planning what will be…. All emotions are forced to mix just like egg, flour, sugar, milk in a bowl of dough. Just remember putting the right measurement.
So, what baking is for 2017?
Making a chocolate cake, people would want to make a physically beautiful cake tasting good. People love a cake that looks pretty and tastes delicious, am I right?
Like making a beautiful and delicious chocolate cake, that’s what I want my life a head especially my 2017 be like.
I’ve gotta….
Prepare the best ingredients and know how much each of them is needed;
Get ready with the cleanest and most complete tools;
Spend good time in the kitchen;
Concentrate to the processes, never miss any one and do it as instructed;
Be patient.
My chocolate cake is my success in 2017.
Whatever I do, I succeed. And, I know as long as I have the proportion of ingredients and correct processes, I will!

Chocolate Cake
Ingredients:
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 tablespoons King Arthur Flour Black Cocoa, optional
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
2 eggs
1 cup buttermilk
1 cup strong black coffee (I used Green Mountain Coffee’s Vermont Country Blend)
1/2 cup vegetable oil
2 teaspoons vanilla extract
How to make:
– Heat oven to 180°F.
– Grease and flour two 9-inch round baking pans or one 13x9x2-inch baking pan. Set aside.
– In the bowl of a stand mixer fitted with the whisk attachment or in a large bowl with an electric mixer, combine the sugar, flour, cocoa(s), baking soda, baking powder and salt.
– Mix on low until dry ingredients are thoroughly combined.
– Add eggs, buttermilk, coffee, oil and vanilla. Beat on medium speed for about two minutes; the batter will be thin.
– Pour batter evenly into prepared pans.
– Bake in preheated oven for 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden toothpick inserted in center comes out clean.
– Cool 10 minutes; remove from pans to wire racks.
– Cool completely.
– Frost as desired.

2016 Resolution – #2
Oh my…. And it is January 2, 2016. I feel like not ready to change the year – 363 to end this cycle and I haven’t decided if my resolution is fixed yet or need some trimming.
Last week I collected 5 things to focus on in 2016. Too many for a focus but yeah I need to get distracted sometimes ha ha….
So….
- I promise to always have some flower when not traveling: easy to have some stems of fresh color in a jar but not traveling for at least one week is still a question. I hope I have more time to see the flower survive for more than one week.
- Let me always support animal rescuers. I can’t do it myself with my current type of job. Really, I have to support those kind people better.
- I’ve gained too much weight and I MUST handle this problem. No choice: this year I have to take diet seriously and exercise consistently. Get ready for ready space for my swimsuit and gym-suit.
- I should be more productive…. Oh no…. How should I explain this to myself? Write more, read more, draw more, etc more — to reach a better target.
- And, be balanced! inside out, left and right, back and front
Enough?
I think so.
So, let’s do it!

I Do What I Believe Is Right
When I was a teacher years ago, I didn’t stop telling my students that all deeds are based on our intention and our intention is based on our belief. “Never stop asking yourself whether or not what you believe is right,” said I at that time. And, I’ve got tested every now and then — I guess the Universe wants to show us that I walk the talk.
And, yes. I walk the talk. I do believe what I believe is right, with reserve. Challenging our own belief is kinda routine task scheduled in life. With that, I don’t bother anymore what people are saying about what I’m doing or even what or who I am. This is a good life to travel and this path is already set, planned in the space somewhere by the Core of the Universe…. Why bother by fellow traveler?
I’m not a teacher anymore and recently I’ve been tested by a fact that some people are just sucking energy like vampire sucks the blood. Don’t worry, they are not that powerful. They suck, but weakly — not as strong as they think they are. They think they suck your “blood”, your “real life spirit” to dry but actually they only suck the “sweat”, the daily emotion that act as rubbish of our day. So, the best treatment for those suckers is only one: just smile and play seriously….
Play seriously? Yups, don’t entertain them. Just treat them as friends who have nobody to share and cry for bucket to puke all their stress of life. Not seldom they would try to make you jealous (to them or to others) or angry by sending you stories or news…. But, that is the worst scenario. They just need your attention so give it to them. And, I believe it is right — paying attention is right! 🙂
It is weekend and ‘ve got laundry to clean up so nothing much I can do to entertain those kinds of things. Ignore.
Again, I do what I believe is right and ‘m gonna keep doing it till I think I don’t believe what I am doing is right. Nothing to explain to the outer world.

Badly Need Taiwan Visa
I didn’t make a good preparation for my next trip to Taiwan, because I forgot that my visa to Taiwan expired – I thought it is still applicable…. In fact, it my China visa is still “alive”.
I had to apply for it immediately, Tuesday my visa must be ready because my flight is on Wednesday.
In this situation, I really need miracle… God, please would you give me miracle…. A chance to amend my insufficient preparation of this trip. My trip is always not merely business trip – there is always added value to it. It is at the same time my spiritual journey.
All is ok, only one cover letter is a bot worrying. I hope HR find my email the earliest and can issue the letter by Monday…. Please oh God, circulate Universe to support me realizing my action into goal.
Oooohhhh…. This time I’m solo jumpy.
